Suspense author Mary Burton’s drops by with a sweet treat for readers.
Apple Upside Down Quick Break
3 T butter
½ cup brown sugar
1 t cinnamon
1 t vanilla
½ c pecans
1 apple, thinly sliced (I prefer Macintosh or Gala)
1 cup applesauce
3/4 cup sugar
1 t cinnamon
1/3 cup vegetable oil
1 t lemon zest
1-1/4 cup all-purpose flour
2-1/2 t baking powder
½ t salt
Confectioner’s sugar for dusting
For the topping: Over low heat in a sauce pan melt the butter, brown sugar, cinnamon, vanilla and paeans together. In a greased loaf pan, spread the topping on the bottom. Slice the apple into thin wedges and arrange over the topping.
For the cake: Mix together applesauce, sugar, vegetable oil, eggs and lemon zest. In another bowl sift together all-purpose flour, baking powder and salt. Mix the dry ingredients into the wet. Don’t over mix. Pour batter on top of topping in the loaf pan. Bake in a preheated 350-degree oven for thirty-five minutes. Turn the cake out onto a platter and dust with confectioner’s sugar.
