I’ve known author Velda Brotherton for a while now, through various writing groups and websites. Today, She shares this delightful recipe penned by her Grandmother. This is a gorgeous cake and tastes so very good.
Grandmother’s Cherry Cake
2 1/4 c flour
1 1/3 c sugar
5 teaspoons baking powder
1 teaspoon salt
Cut in 1/2 c shortening (Oil could be used but you would have to consult a table for the amount)
Add: 1/4 cups maraschino juice
16 maraschino cherries chopped
1/2 cup milk
Mix for two minutes at medium speed on a mixer
Add the whites of 4 large eggs unbeaten, then beat mixture two more minutes
Fold in 1/2 cup chopped nuts.
Bake in 3 layer pans for 30-35 minutes at 350 degrees
Icing
Boil 2 1/2 cups sugar, 1/2 cup white syrup, 1/4 teaspoon salt, 1/2 cup cold water
Test in cold water and cook to soft ball stage
Beat 2 egg whites until stiff, continue beating while pouring syrup into whites slowly. Add 1 teaspoon vanilla and 10 large marshmallows, beat until icing holds its peak.
This will frost three layers.

Oh, my gosh, this sounds heavenly. I’ll get the
ingredients next time we can get out. I bet it is beautiful, too. I love those cherries. Might be a great cake for Valentine’s Day, too, or any special occasion. Our grandkids love the cherries, too, so that will be a big hit with them. Would be a great
wedding cake or anniversary cake, any special occasion.

I may have clicked on this because it’s almost lunchtime and my salivatory juices jumped at the title. Sounds delicious. I’ve copied it off and intend to try it for Valentine’s Day.
